The produce and supplies brought in the market from 3 p.m. in the previous day through midnight were promptly laid out in the hall by wholesalers.
Inspection prior to auction
Intermediate wholesalers and authorized buyers look over produce and supplies prior to auction. They decide what produce and at what price they would buy.
Start of the auction
The whole produce and supplies are sold by auction. The highest bidder buys the goods. The flowers and meat are handled through "Mechanized auction," using computers (photo in the right). The auction will start around 5 p.m. for seafood, around 6:30 a.m. for fruit and vegetables, around 7:30 a.m. for flowers and around 8 a.m.
Shops of allied traders
Shops, which sell tools such as knives, rubber boots measures and scales and other, which are used for the people in the market, as well as some restaurant are lined up on the market lot.

Checks and inspection
Supervisors are busy from early in the morning in supervising and giving guidance to people, making a tour on the wholesale block, and from shop to shop so that foods are handled in a sanitary condition, and no harmful food or poisonous substance are found. They conduct a bacteriological examination from time to time, and if there are cases of any violation of the Food Hygiene Law or harmful food is found, they take administrative measures to dispose such food, or prohibit the sale of food, etc.
They also give guidance in sanitary handling of foods.
In the meat market, a meat works section is under strict inspection from slaughtering to dressing of cattle and hogs to primal or subprimal cuts.
Intermediate wholesalers' shops crowded many visiting buyers
The intermediate wholesalers place their goods in their shops, which they purchased from the wholesalers. They sell their goods to stock purchasers in smaller size/volume. The market is busy with a numbers of buyers until about 11 a.m.
