The Selection of Business Operators in the New Business Model for the Advanced Food Waste Reduction Using ICT Project
The Tokyo Metropolitan Government has been addressing the reduction of food waste in cooperation with a range of actors including businesses and consumers with the purpose of halving food waste in 2030 and achieving net zero by 2050 under the Zero Emission Tokyo Strategy.
We have selected business operators to work on pioneering initiatives with TMG aimed at reducing food waste by using ICT, a new technology, as described below. The business operators were selected from a strong field of applicants during the period July 16 to August 14, 2020.

Examination of a business model to reduce food waste at food supermarkets, etc. by creating an MD calendar with AI using big data, such as weather data, satellite data and harvest forecast data, to find the optimum conditions for purchasing foods.
To achieve food waste reduction through optimizing food purchasing at food supermarkets, etc.
- MD calendar: Calendar forecasting sales for each product
- POS (point of sales): Data recorded when products are sold

(2) The reduction of food waste throughout the entire supply chain based on retail demand forecasts

Examination of a business model to reduce food waste throughout the entire supply chain including the optimization of logistics by realizing demand forecasts and automatic ordering in the categories where food waste is more likely to happen through visualizing the hourly inventory status at retail stores and using a cloud-type demand forecast service.
To realize food waste reduction in each stage of production, wholesale, retail and consumption, and the entire supply chain.
